Chocolate Mint Brownie Bites - make any day Chocolate Mint Day with these Chocolate Mint Brownie Bites from American Girl and Williams Sonoma

Brownies are great for several reasons: they’re super easy to make and share, they’re endlessly versatile, and everyone loves them. This version, which is made with two kinds of mint candies, is great when you want a little something special that you can make with ease.

Mint Brownie Bites

Makes 16 Brownie Bites


  • ¾ cup (1½ sticks) unsalted butter, cut into chunks
  • 6 ounces unsweetened chocolate, coarsely chopped
  • ⅓ to ½cup (crushed) hard peppermint candies or candy canes
  • 3 large eggs
  • 1½ cups sugar
  • 2 teaspoons
  • vanilla extract
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 16 small chocolate-covered peppermint patty candies, unwrapped


Preheat the oven to 350°F. Spray an 8-inch square baking dish with nonstick cooking spray (you can use a 9-inch square baking dish instead, but the brownies will be thinner).

In a small saucepan, combine the butter and chocolate. Place the pan over medium-low heat and heat the mixture, stirring often, until melted and smooth. Remove from the heat and let cool slightly.

While the chocolate mixture cools, put the hard candies or candy canes in a large plastic bag with a zipper closure. Using a rolling pin, lightly crush them into small chunks. You should have ⅓ to ½ cup of crushed candy.

In a large bowl, whisk together the eggs, sugar, vanilla, and salt until blended.

Add the chocolate mixture and whisk until blended. Add the flour and whisk slowly just until no lumps remain.

Pour about two-thirds of the batter into the prepared pan and spread it evenly with a rubber spatula. Top with the peppermint patty candies in a single layer. Dollop the remaining brownie batter over the top, gently smoothing into an even layer. Sprinkle the crushed candy canes on top of the batter.

Bake until a toothpick inserted into the center of the brownies comes out with only moist crumbs attached, about 40 minutes. (Be careful not to overbake.) Remove the baking dish from the oven and set it on a wire rack.

Let cool completely. Cut the brownies into 16 squares and serve.
