A Mother's Day Brunch Made Just Right for Mom

A delicious Mother’s Day brunch with oodles of waffles and toppings, cheesy scrambled eggs, and yogurt parfaits that turn breakfast into dessert is a great way for your family to celebrate the day together. For an unexpected treat, put yogurt and berries into ice-pop molds for parfait pops. Cover the breakfast table in craft paper and use chalk to write heartfelt notes or draw mom-inspired doodles. Stick to a pink-and-blue color palette to match the berries. Writing out the brunch menu on a chalkboard is a fun way to let everyone know what they’re about to enjoy.
TIE YOUR SPOONS ON
Use pretty, colorful ribbons to tie spoons around each yogurt-berry parfait cup.
WRITE YOUR OWN MENU
Set up a small chalkboard on your table or against the wall and write your breakfast menu on the board in chalk.
SET UP A WAFFLE BAR
Waffles are a treat when served with butter and maple syrup, but they reach a whole new level with a fun array of berries, mini chocolate chips, and whipped cream to throw on top!
MAKE PARFAIT POPS
For a breakfast treat, freeze yogurt and berries in ice-pop molds. Once the pops are frozen, remove them from the molds, brush one side with some honey, and dip in granola.

WAFFLES WITH LOTS OF TOPPINGS
Makes 4 to 6 servings.
YOU WILL NEED:
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 3 large eggs
- 1½ cups whole milk
- 6 tablespoons (¾ stick) unsalted butter, melted
- Preheat a waffle iron. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In a large bowl, whisk the eggs until light and frothy, then whisk in the milk and melted butter. While whisking gently, gradually add the flour mixture and mix just until combined. The batter will be lumpy.
- When the waffle iron is ready, pour batter over the cooking grid. Close the lid and cook until the steam subsides and the indicator light signals that the waffle is ready, 2 to 4 minutes. Carefully open the iron, transfer the waffle to a serving plate, and serve right away with toppings. Cook the remaining batter in the same way, serving each waffle as it’s ready.
TOPPING IDEAS:
Pure maple syrup
Raspberry jam or orange marmalade
Sliced strawberries
Raspberries and/or blueberries
Sliced pitted peaches or nectarines
Mini chocolate chips
Sweetened ricotta cheese
Whipped cream
