Patriotic Fruit Parfaits


Assemble these treats yourself—or, better yet, set up a parfait buffet and let everyone create their own red, white, and blue confection. Here are a few combinations to get the party started:

Berry Sparkler

Red, white, and yum! Layer cubes of angel food cake, strawberry slices, and whipped topping in a clear dish. Top with a dollop of whipped topping and sliced strawberries. Finish with a light sprinkle of blue sanding sugar.

Firecracker Fizzer

Popping candy makes this dessert crackle! Make two packages of gelatin—one red, one blue—in advance. Chill in separate 9" x 13" pans. When firm, cut the gelatin into 1" cubes. In a tall, clear tumbler, layer whipped topping between layers of gelatin cubes. Top with a dollop of whipped topping and, just before serving, sprinkle popping candy on top. This one won’t wait, so be sure to eat it before the candy fizzles!

Sunrise Salute

Have dessert for breakfast (or breakfast for dessert)! Layer plain or vanilla yogurt, blueberries, raspberries, rice cereal, and red and blue O-shaped cereal in a tall, clear tumbler or mug. Top with more yogurt and a few blueberries.

Stars and Stripes

Cheesecake filling gives this parfait a little extra star-power. In a large bowl, mix 8 ounces softened cream cheese and 6 tablespoons confectioners’ sugar together. Whisk until fluffy. Add 1 cup whipped topping and 1 teaspoon lemon juice. Stir until smooth. Layer cream cheese mixture in tall glasses with blueberries and sliced strawberries. Top with whipped topping and stars cut from fruit leather.

Cookie Crackle

Crumbled cookies add crunch to this treat. In a large bowl, combine 3 ounces softened cream cheese, 1 cup ricotta cheese, 1 cup prepared vanilla pudding, and 1/3 cup thawed orange juice concentrate. Mix well and set aside. Then crumble butter cookies, shortbread, or vanilla cookies in a separate bowl. Layer cookies, cream cheese mixture, blueberries, and raspberries in clear dishes. Add whipped topping and a place a cookie on top.
