• Nonstick cooking spray

• 2½ cups old-fashioned rolled oats

• 1½ cups finely chopped dried apricots

• ½ cup toasted sunflower seeds

• ½ cup wheat germ

• 1 teaspoon ground cinnamon

• ½ teaspoon salt

• ½ cup (1 stick) unsalted butter, cut into pieces

• ½ cup firmly packed light brown sugar

• ½ cup creamy almond or peanut butter

• ⅓ cup maple syrup

• 2 large egg whites

Instructions

1. Preheat the oven to 350°F. Spray a 9-by-13-inch baking pan with nonstick cooking spray.
2. In a large bowl, combine the oats, apricots, sunflower seeds, wheat germ, cinnamon, and salt and stir with a rubber spatula. Set aside.
3. In a small saucepan, combine the butter, brown sugar, almond butter, and maple syrup.
4. Set the pan over medium heat, bring to a simmer, and cook for 1 minute, stirring constantly with the spatula.
5. Remove from the heat and pour over the oat mixture. Stir with the spatula to mix well. Let cool for 5 minutes.
6. In a small bowl, whisk the egg whites until frothy, for about 30 seconds. Add the egg whites to the oat mixture and stir to combine.
7. Pour the mixture into the prepared pan. Using the spatula, press the mixture firmly to create an even layer.
8. Bake until the edges are golden brown and the top is no longer sticky to the touch, 20 to 25 minutes.
9. Remove the pan from the oven and set it on a wire rack. Let cool slightly.
10. Cut into 12 rectangular or 16 square bars, then let cool completely in the pan for 1 hour.

• 1 pound firm white fish, cut into 1½-inch cubes

• 2 tablespoons olive oil

• 8 (6-inch) corn tortillas, warmed

• For serving: Shredded cabbage, sliced avocado, pico de gallo or salsa, and sour cream

Instructions

1. In a small bowl, stir together the paprika, cumin, garlic powder, onion powder, oregano, thyme, 1 teaspoon salt, ½ teaspoon black pepper, and the cayenne pepper (if using).
2. Place the fish in a large bowl, sprinkle with the spice mixture, and toss to coat.
3. Let stand at room temperature for 5 to 10 minutes.
4. In a large nonstick sauté pan over medium-high heat, warm the oil.
5. Add the fish and cook, stirring occasionally, until just cooked through, about 4 minutes.
6. To assemble the tacos, fill the center of the tortillas with the fish, then top with cabbage, avocado, pico de gallo, and sour cream.

Warm and gooey cheese fondue

• About 2 cups shredded Gruyère cheese

• About 2 cups shredded Emmentaler, Swiss, or fontina cheese

• 2 tablespoons cornstarch

• ½ clove garlic

• ½ cup low-sodium vegetable or chicken broth

• 3 tablespoons cider vinegar

• 1 or 2 loaves French bread, cut into 1-inch cubes

• Optional add-ons include potatoes, cured meats, and vegetables

Instructions

1. Place the Gruyère and Emmentaler cheeses in a large bowl, add the cornstarch, and toss until the cheese shreds are evenly coated.
2. Rub the cut side of the garlic clove around the inside of a fondue pot; discard the garlic.
3. Pour the broth, vinegar, and ½ cup water into the fondue pot. Set the pot over medium-high heat and bring just to a boil.
4. Reduce the heat to medium and whisk a handful of the cheese mixture into the broth mixture until it is almost melted.
5. Repeat with the remaining cheese mixture in about four batches. Continue whisking until the cheese is completely melted and the fondue bubbles, about 1 minute longer.
6. Set the pot over canned heat or another heat source to keep warm.
7. Put the bread and other optional add-ons in a basket and place them alongside the pot.
8. Use fondue forks to dip pieces into the fondue.
